Easy. 7 ingredients. Turn out perfect every time.
Super simple. Here's what you will need:
Packet of yeast
Almond Milk (or other milk sub)
Earth Balance (or other butter sub)
Sugar
Salt
Flour (white)
Cinnamon
Warm 1 cup of almond milk + 3 Tbs Earth Balance in the microwave for 30-45 sec. or until baby-bath warm (not too hot)
Add 1 pkg yeast (quick rise)
Let it foam up (I set Alexa for 10 min)
Once foamy, stir in 1 Tbs of sugar and 1 tsp salt
Add 1/2 cup flour at a time and stir with wooden spoon (I use white flour only for this recipe)
Add up to 5 of these 1/2 scoops until dough is wet but not too sticky and roll into a big ball
Oil a bowl and roll the dough ball around until lightly covered in oil
Cover with a towel and set aside for an hour or more (it should be twice as big or more from original ball)
Roll dough out on floured surface into rectangle (approx 12 x 18 or so)
Microwave 3 Tbs Earth Balance until melted
I use a silicone brush to paint the butter on the surface but you could pour on and spread with the back of a spoon
Sprinkle buttered top with sugar (approx 3 Tbs) and a heavy topping of cinnamon
Roll it up (should be tight but not sushi tight)
Cut into 1 1/2 - 2 inch pieces and place in pan (I use any shaped smaller dish/pan i.e. 8 x 8 or 2 quart oval, pie plate, round cake pan etc.)
Brush tops with rest of melted Earth Balance
Set aside for another 30 min to rise some more and set oven to 350 degrees
After rising another 30 min - place in oven and let them cook for 30 min or until browned
Mix 1 Tbs almond milk or a little more into a cup or so of powdered sugar - should be a thick consistency to pour over rolls when taken out of the oven

Note: I have tried these with Stevia - they had a terrible after taste - but hey, if you like that, go for it, they still turn out.
