To get a little smoky bacon flavor in recipes, bake up a pan of shiitake mushrooms with bacon flavors. This is easy and delicious on sandwiches or in salads that call for bacon.
To make this easy substitute:
1. Buy a box or a log of shiitake mushrooms.
2. Cut off the stems and slice the caps into 1/2 inch pieces.
3. In a bowl, mix the caps with 2 Tbs maple syrup, 1 Tbs olive oil, 1 tsp soy sauce or tamari, 1 tsp smoked paparika, and salt to taste.
4. Spread on a Silpat or foil lined pan and bake in the oven at 350 degrees for 20-30 minutes based on how crispy you want your bacon. Make sure to mix them up half way through cooking.
