Ratatouille

Beautiful, easy, and delicious.


My seven year old son loves the Disney/Pixar movie Ratatouille. We watch it more in the summer when we have eggplants and zucchinis in the garden because he insists on watching it when we make this easy side dish.


Set oven to 375 degrees.


Slice an eggplant, red pepper and zucchini into 1/4 inch slices. In the bottom of a baking dish, spread one 6 oz can of tomato sauce. Add 1 Tbs of olive oil and 3/4 cup water and mix. Stir in 2 cloves garlic minced and 1 small chopped onion (yellow or white). Place the sliced veggies in a spiral on top of the tomatoe sauce. Sprinkle with olive oil and dried thyme. Place a small sheet of parchement paper on top of the dish for baking. Bake for 30-45 minutes. The longer it bakes the softer it gets. For a great meal, top a bed of quinoa with this heaven.
