Quick Vegan Stir Fry

What veggies do you have in the fridge?



Easy vegan stir fry is a family favorite at our house. You can use whatever you have in the fridge or on the counter. A quick cook in the wok with a splash of soy sauce and rice wine vinegar makes this a healthy and delicious meal option.

We hadn't gone to the store for a while but we had red onion, green pepper, broccoli and extra firm tofu. This was a great combo that my 7 year old loved.


Hints and Ideas


Other veggies that we have in our stir frys on a regular basis include:

- cabbage (red or green)

- carrots

- mushrooms

- squash

- green onions

- bok choy

- celery


BUT....here is the tip. Cut all of the veggies up first. Cook them or add them to the wok in order of how you like their texture. For instance, I always put carrots, onions and mushrooms in first and then cabbage and broccoli last because I like these veggies crisper. Top your stir fry with siracha for a good kick.
